I mean sweet potatoes in general are gold status due to its low-glycemic and high fiber properties (aka blood sugar balance = fat burn). This version of the classic is low in sugar, so it’s going to be less sweet, but topped with the beautiful nut mixture makes it fancy and less of a “dessert” and more of a smart side dish that will help keep your blood sugar stabilized for actual dessert. or wine. your choice. Make this casserole (minus the baking) up to two days in advance and cover with tin foil, allow it to reach room temperature before sticking it in the oven to bake.
