Sweet Potato Casserole
Sweet Potato Casserole is another Thanksgiving fav around here. I mean sweet potatoes in general are gold status due to its low-glycemic and high fiber properties (aka blood sugar balance = fat burn). This version of the classic is low in sugar, so it’s going to be less sweet, but topped with the beautiful nut mixture makes it fancy and less of a “dessert” and more of a smart side dish that will help keep your blood sugar stabilized for actual dessert. or wine. your choice. I don’t judge. 🥧🍷
TOOLS NEEDED: Food Processor.
MAKE AHEAD TIPS: Making things ahead of time is the biggest tip for enjoying your holiday and not feeling stressed the F out. It also allows you to sleep in until at least 7am. Score. Make this casserole (minus the baking) up to two days in advance and cover with tin foil, allow it to reach room temperature before sticking it in the oven to bake.
