TOOLS NEEDED: High-speed blender or immersion blender.

MAKE AHEAD TIPS: You can easily make this soup ahead of time and store in jars until you need to heat up again in a saucepan. Or you can roast the squash and shallots and put them in an airtight container stored in the fridge for the next day, then blend and serve.
